Key Lime Pie

Prep Time: 10 min.
Yield: eight servings.

2 eggs

1 egg yolk

1 can (14 oz.) sweetened condensed milk

1/2 c. fresh or bottled key lime

Juice or 1/2 lime juice

2 tbsp. water

1-2 drops green food coloring (optional)

1 tsp. grated lime peel

1 KEEBLER READY CRUST Graham Pie Crust

1 c. whipping cream

2 tbsp. sugar

1/2 tsp. vanilla

Key lime slices or lime slices (optional)

1.  In lg. mixing bowl, beat eggs & yolk w/ wire whisk til combined.

2.  Gradually add milk to yolks, beating til combined.  Add lime juice, water, food coloring (if desired) & lime peel.  Whisk til well mixed.  Pour into crust.  Place on baking sheet.  Bake @ 350 deg. F. or til almost set in center.  Cool on wire rack 1 hr.  Refrigerate @ least 4 hrs.

3.  Chill sm. mixing bowl & beaters of electric mixer.

4.  In chilled bowl, beat cream, sugar & vanilla on med. speed of electric mixer til stiff peaks form.  Pipe or spoon whipped cream around edges of pie.  Garnish w/ lime slices, if desired.
