Lemon Meringue Pie

A pie for lemon lovers.

Ingredients

  • Juice of 4 lemons
  • 4 eggs
  • 3 cups water
  • 2 cups sugar
  • Pinch of salt
  • 1/2 cup corn starch

Method

Mix the water, sugar, salt, lemon juice in pan on low heat, seperate egg whites and yolks. The whites will be used for topping. Beat yolks, pour into pan with liquid ingredients on stove. Bring to boil. Take off heat. Dissolve corn starch in small amount of cold water. Mix into pan with lemon mixture. Pour mixture in graham cracker pie crust.  Add 2 or 3 drops of water to egg whites, beat until fluffy, fold in 1 tsp. sugar, spread on top of pie. Place in preheated oven of350*, bake until whites turn golden brown. Let cool completely. Then enjoy.

There is a little secret that my mother told me add meringue. Always make it on sunshiny day because the whites will not fluff on cloudy days. It my be an old wives tale, but I have always listened to my mother.

    the picture seems weird. =) that must be a really distinct pie. mouth-watering..
