Magic Orange Custard Pie

This is a lovely and light crust.

Ingredients

  • 2 cups skim milk
  • 1/4 cup frozen orange juice concentrate, thawed
  • 6 egg whites
  • 1 tablespoon plus 1 tspoon vegetable oil
  • 2 tspoon vanilla extract
  • 1/8 tspoon orange extract
  • 1/3 cup sugar
  • 1/4 cup plus 2 tablespoon all-purpose flour
  • 2 teaspoon baking powder

Method

Preheat oven to 350 F

Lightly oil a 9-inch pie pan or spray with a nonstick cooking spray. In a blender container, combine all ingredients. Blend 1 full minute. Pour mixture into prepared pan. Let stand 5 minutes. Bake 30 minutes, until puffed and golden. Cool slightly, then chill.
