Mandarin Dream Pie

A light, refreshing refrigerator pie, perfect for summer entertaining. It can also be “morphed” into something different by using different fruits/Jello flavors.

Ingredients

  • 1 can mandarin oranges, drained (save juice)
  • 1 small package orange Jell-O
  • 1 small tub Cool Whip, thawed
  • 4 ice cubes
  • 1 graham cracker pie crust

Method

Bring reserved juice from oranges to a boil and stir in Jell-O until dissolved.  Stir ice cubes into Jell-O to cool slightly.  Fold together mandarin oranges, Cool Whip and Jell-O until well combined.  Pour into pie crust and refrigerate until firm, about 2 hours.

    I love mandarin oranges, this sound like a very interesting recipe. I am definitely going to try it.
