Mexican Black Bean and Corn Pie

This is a nice healthy meal that will accommodate vegan or carnivorous diets. It will easily make eight slices. Serve it with your favorite dipping condiment.

Ingredients

  • 8 ounces of shredded  sharp cheddar cheese
  • 4 10 inch soft flour tortillas
  • 1 Tbsp of canola oil
  • 2 (15 oz) cans of black beans
  • 1 can of white or yellow corn
  • 1 large thinly diced onion
  • 1 minced jalapeno
  • 1 clove of minced garlic
  • ½ tsp of cumin
  • ½ tsp each of salt and pepper
  • ½  cup of chopped green onions
  • 1 Corona beer
  • The juice of one lime
  • ¼ cup sour cream, 1/4 cup of salsa, and or ¼ cup of guacamole

Method

  1. Preheat oven to 400 degrees.
  2. Your tortillas will be 10 inches. Trim them down to fit into a 9 inch springform pan.
  3. Add oil, onion, jalapeno, and garlic to a nonstick skillet. Cook over med low heat until onions are tender.
  4. Drain corn and black beans, then add to skillet.
  5. Slowly pour in enough Corona to cover the bottom of the skillet.
  6. Add lime juice and seasoning to the skillet; cooking about 10 minutes…or until liquid is gone.
  7. Start by layering one tortilla in the bottom of the springform pan.
  8. Add ¼ of the bean mixture.
  9. Add ¼ cup of cheese.
  10. Repeat the layers ending with 1 cup of cheese on the top layer.
  11. Bake for 25 minutes.
  12. Garnish with green onion.
  13. Serve slices with a dollop of sour cream, guacamole, and or salsa.
