No Bake Cannoli Cream Pie

Sweet, delicious, eye appealing and easier to make than regular cannoli’s.

Cannoli’s can be a little tricky to make and fill.   However you can whip up this pie in about an hour!

Ingredients for Cannoli Cream Pie

  • 1 9-inch baked pie shell
  • 1 small package (instant) vanilla pudding
  • 1 (16 oz. ) container of small curd cottage cheese
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1/4 cup semisweet chocolate chips
  • 1/2 cup finely chopped almonds or pistachios
  • 1/2 cup whipped cream
  • 5 or 6 maraschino cherries, drained and halved

Method

Prepare pudding according to directions using 1 1/2 cups of milk;  chill 30 minutes.  Puree cottage cheese, sugar and flavorings in blender or food processor.  Fold into chilled pudding along with chocolate chips and nuts.  Pour into pie shell. 

Spread whipped cream on top and decorate with cherries.  Chill

    Sounds like an easy one for my granddaughters to try making. No bakes are always good for kid activities.

    You know, when I had the restaurants I used to make these the traditional style and I just could never get into them. This recipe is something I would definitely try, and it’s a great alternative to ricotta.
