Peanut Butter Brownie Pie

This one is easy but takes a bit of time so you’ll have to think ahead.

Ingredients

  • 1 Package Brownie Mix (450 grams)
  • 1 Package Vanilla Pudding (4 Serving size)
  • 1 1/2 Cups Milk (Skim works perfectly so you might as well save a few calories here)
  • 1/2  Cup Smooth Peanut Butter
  • 1 Cup of thawed Cool Whip Topping

Directions

  1. Preheat oven to 350° Fahrenheit.  Grease a 9 inch pie plate.
  2. Prepare brownie mix according to package instructions in the pie plate.  Let it cool completely — about 1 hour.
  3. Scoop out the center of the cooled brownies and put the pieces in a bowl for later use.  Be careful not to scoop too much out — you want to have a thin layer of brownie on the bottom of the pie plate and approximately 1/2 inch thick rim around the edge.
  4. Pour the milk and pudding mix into a medium mixing bowl.  Whisk for about 2 minutes.  Add 1/3 cup of peanut butter and whisk this in as well.
  5. Spoon this pudding mixture into the brownie crust.  Top this mixture with the brownie pieces that you scooped out earlier.
  6. Microwave the remaining peanut butter in a microwave safe bowl for one minute on high.  Stir well and drizzle the hot peanut butter over the pie.
  7. Refrigerate for at least 2 hours or until the pie is set.  Enjoy!
