Pumpkin Pie with Meringue Peaks

Can’t decide on a meringue pie or a pumpkin pie for your Halloween, Thanksgiving or Christmas menu? No frets, you can have the best of both worlds with creamy pumpkin pie topped with melt in your mouth meringue.

Ingredients

Pie

  • 9 inch pie crust
  • 2 large eggs
  • 15 oz can of pumpkin or 2 cups of fresh cooked pumpkin
  • 1 c. heavy cream
  • ½ c. milk
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • ¾ cup dark brown sugar
  • 1/8 tsp ground cloves

Meringue

  • 1/3 c. sugar
  • 3 large room temperature egg whites
  • 1/8 tsp cream of tartar

Method

  1. Preheat oven to 400 degrees.
  2. Bake pie crust for 10 minutes.
  3. Reduce oven temperature to 350 degrees.
  4. In a large bowl, whisk all the ingredients under “pie ingredients” together.
  5. Set the pie crust on a baking sheet.
  6. Pour the filling into the pie crust.
  7. Bake the pie for around 50 minutes or until the center is set.
  8. Allow pie to cool.
  9. Lower oven temperature to 375 degrees.
  10. In a medium bowl, beat the egg whites with an electric mixture until they are frothy. This usually takes around 2 minutes on medium speed.
  11. Add the cream of tartar and continue beating for 2 more minutes or until soft peaks form.
  12. Slowly add the sugar while continuing to mix.
  13. Increase the blender speed to medium-high and beat 2 more minutes or until the egg whites are stiff and glossy.
  14. Add the meringue to the pie. You can use the back of a spoon to form small peaks.
  15. Bake the pie about 10 minutes or until meringue is golden brown.
  16. Cool for 3-3 ½ hours.
  17. Slice and serve.

If you want to have some fun for the seasons:

For Halloween, mix together one drop of red, one drop of yellow, and one drop of blue food coloring. Mix well and then add the black food coloring to the egg whites during step 12. For Christmas, add a drop or two of red or green food coloring.

    I am not a huge fan of meringue, but LOVE pumpkin pie. I like the food coloring ideas.
