published by diamondpoet on Nov 13, 2009

You can prepare a quick apple pie in just minutes and have the smell of fresh baked pie in your house for the holiday with little minimal effort.

Delicious Homemade Apple Pie

1 Ready-made double pastry for 9-inch pie (Pillsbury)

3/4 cup firmly packed Light Brown Sugar

1 1/2 tablespoon cornstarch

2 teaspoon cinnamon

2 teaspoon ground nutmeg

1 table spoon grated lemon rind

1/8 teaspoon salt

4 peeled, cored and thickly sliced apples

1 tablespoon lemon juice

Add  4 1/2 tablespoons domino sugar if apples are tart (optional)

1 tablespoon vanilla2 tablespoons butter

Preheat oven to 400 degrees. Line 9 inch pie pan with half of the pastry.

In a large bowl, mix in brown sugar, cornstarch, cinnamon, nutmeg, salt, vanilla, and lemon rind.  Toss apples in mixture and coating evenly.

Spoon mixture into lined pastry pan.

Sprinkle with lemon juice and dot with butter.

Top with remaining pastry.

Trim edges and using a fork, secure edges.  Cut slits in top of crust

Bake for 25-30 minutes, or until golden brown.

The choice of apples you use is entirely up to you, you should taste apples to determine rather you will need to add additional granulated sugar.

I’m not one for pies and cobblers. I never really liked cooked fruit; I prefer just to eat it as it comes from the tree. But my husband loves apple pie so I might have to bake one for him. Thanks for shring!
