Strawberry Cheese PIE

I found this recipe years ago in a magazine, not sure which one now but I think Family Circle, clipped it out and saved it. I have made this hundreds of times since and it is always a big hit. It is so simple to make and no baking so it makes an awesome summertime dessert and you don’t have to turn on the oven and heat up the house. If you like strawberries and cream cheese, you are going to love this.

STRAWBERRY CHEESE PIE

You will need a 10” deep dish pie to make this. No baking

In a small bowl combine

11/2 cups finely ground graham cracker crumbs

1/4 cup butter or margarine

When well blended press mixture evenly over the

bottom of your pie plate a and little up the side and set aside to chill

in refrigerator while you are making the filling.

In a mixing bowl combine and beat until light

2 – 8 oz pkgs. Cream cheese softened with

1 cup small curd cottage cheese

1/2 8 oz container of non-dairy whipped topping (I use Cool Whip*)

Fold in remaining non-dairy topping until well combined

Hull and slice 1 1/2 cups fresh strawberries and toss with

1/2 Tbsp. lemon juice and 1 Tbsp. granulated sugar

Fold strawberries into topping mixture

Fold in1 small pkg. strawberry or wild strawberry flavored gelatin until well combined (I like the wild strawberry best for this)

Cover and chill at least 2 hours before serving. Cut into wedges and serve with a dab of non-dairy topping or whipped cream and a whole fresh strawberry for garnish.

    This sounds yummy. I had to have a cheesecake from the store for a Valentine’s Day president from my mom. So maybe she will make this one.
