The “Famous” Lemon Meringue Pie Recipe

Anyone like pie’s? Then try this tasty lemon meringue pie.
This recipe also works well with lime juice and rind!
Ingredients
- 1 baked pie shell
- 1 ¼ cup sugar
- 3 tbsp. cornstarch
- ¼ cup lemon juice
- 1 tablespoon (generous) grated lemon rind
- 3 eggs, separated
- 1 ½ cup boiling water
- 6 tbsp. sugar
Preheat oven to 425
Method
- Mix 1 ¼ cup sugar with the cornstarch. Stir in the lemon juice and lemon rind. Gently beat the egg yolks, stir into the sugar-lemon mixture and mix well. SLOWLY stir in 1 ½ cup boiling water. Bring mixture to a boil over medium heat, stirring occasionally. Boil custard gently for 4 minutes, stirring constantly. Pour into baked pie shell.
Beat egg whites until they begin to form soft peaks. Gradually add 6 tbsp. sugar while continuing to beat. Beat until stiff peaks form. Spread over top of cooled custard.
Place in preheated oven for 10 – 15 minutes until meringue is well browned.
Cool and serve.
