Pumpkin Pie Squares

A pumpkin delight put into a square pan instead of a pie tin.
This is an old family recipes. We use pumpkins right out of our own garden for this family favorite.

Everyone loves pumpkin pie, right?  Especially around the Holidays.  Well here is a treat that you can eat almost anytime of the year, but they still taste extra good at Thanksgiving.  They are very tastey and the kids can even eat them with their fingers.  Of course, you can still put them on a plate with a dollap of whip cream for an even tastier treat.  These are very yummy and they never last long at our house.

Ingredients

Crust

  • 1 Cup of sifted flour                                                                         
  • 1/2 Cup quick rolled oats                                                                 
  • 1/2 Cup brown sugar                                                                          
  • 1/2 Cup butter or margarine   

Filling

        .3/4  cp sugar  

      . 1/2 tsp salt

      .  1 tsp cinnamon                                            

  • 1/2 Tsp cloves
  •                                                                                                         
  • 1   16 oz can or 2 cps pumpkin
  •  1 131/2 oz cn evaporated milk
  • 2 eggs

Topping                                                                                                 

  • 1/2 Cups chopped walnuts or pecans 
  •      
  • 1/2 Cups brown sugar                                                                       
  • 2 Tbsp butter or margarine

Method

Combine the first four ingredients of the crust mixture.  Mix until crumbly.  Press into ungreased 13×9x2 inch pan.  Bake at 350 degree oven for 15 minutes.

Combine next eight ingredients of the filling mixture.  Mix well.  Pour over baked crust and bake in 350 degree oven for 20 minutes.

Combine three remaining ingredients and crumble over filling.  return to oven one last time.  350 oven for 15 minutes or until filling is fully cooked and set.

When cooled, cut into squares and place on plate with dollap of whipped cream or may be eaten with fingers.  Enjoy.
