Quick Tirmisu

They serve this all over the world and now you can have it in your own home. It is very is to make and even easier to eat! Enjoy.

Ingredients

  • 2 cups mascarpone
  • juice of 1 lemon
  • 5 tbsps sugar
  • 16 sponge cookies
  • 1/2 cup strong black coffee
  • 4 tbsp brandy
  • 3 tbsps cocoa powder

Method

  1. Beat together the mascarpone, lemon juice and sugar until creamy.
  2. Place half the sponge fingers in a large serving bowl.  Sprinkle with half the coffee and half the brandy.  Spread over half of the mascarpone mixture and smooth with a metal spatula.
  3. Arrange the remaining sponge cookies on top.  Sprinkle with the remaining coffee and brandy and cover with the remaining mascarpone mixture.  Smooth with a spatula, and chill in the refrigerator for 15 minutes.
  4. Sift the cocoa powder over the mixture and serve immediately.

Tip: You can add 1 cup pureed and sieved raspberries to the mascarpone.  This gives it a very fresh flavor.
