Raisin Almond Dreams

Scrumptious raisin almond dreams are much welcomed, fast and simple to make, budget friendly treats equally at home in the lunch box and as accompaniment to your favorite beverage (coffee, tea, milk, Milo, hot chocolate etc.)

Raisin Almond Dreams Ingredients:

  • 2¼ Cup (335g) of Sifted Plain Flour
  • 2 Cups (340g) of White Chocolate Chips
  • 1 Cup (125g) of Roughly Chopped Raisins
  • 1 Cup (155g) of Chopped Almonds
  • 1 Cup (250g) of Softened Butter
  • ½ Cup (115g) of Caster Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • 1 Egg
  • 1 Tablespoon of Grated Orange Zest
  • 1 Teaspoon of Bicarbonate of Soda
  • ½ Teaspoon of Freshly Ground Sea Salt

Method:

  1. In a large mixing bowl to cream together the softened butter, the soft brown sugar and the caster sugar until light and fluffy
  2. Beat in the egg and the orange zest
  3. In another mixing bowl combine the sifted plain flour, the bicarbonate of soda and salt
  4. Gradually add the combined dry ingredients to the creamed mixture and mix well
  5. Fold in the chocolate chips, the coarsely chopped raisins and the chopped almonds
  6. Preheat oven to 1800C
  7. Drop tablespoons of raisin almond dreams dough 5cm (2”) apart onto greased baking trays
  8. Transfer, raisin almond dreams, loaded baking trays to preheated oven and bake at 1800C for around 10 minutes or until edges turn golden brown
  9. Once cooked remove raisin almond dreams for oven and let stand to cool for 5 minutes prior to transferring to wire racks to cool completely
  10. When cooled transfer raisin almond dreams to an airtight container to await consumption
