Recipe for Christmas Shortbread

Ingredients

  • 4oz caster sugar
  • 8oz butter
  • 12oz plain flour (sifted)
  • A pinch of salt

To Decorate

  • 2oz icing sugar
  • gold or silver balls
  • glace cherries
  • angelica

Method

  1. Put the sugar and the butter together in a large bowl and beat until combined
  2. Sift in the flour and the salt then work together to form a soft dough like mixture
  3. Turn out onto a lighly floured surface
  4. Knead gently for a few moments until its lovely and smooth, but avoid over handling
  5. Leave to chill in the fridge for 10 – 15 mins
  6. Roll out the dough on a lightly floured work surface and cut out your festive shapes with christmas cutters
  7. Place them onto a light greased baking tray
  8. Preheat the oven on gas mark 4, 180oC, 350oF, and bake the biscuites for 10 – 15 minutes until they are golden brown
  9. Transfer to a wire rack to cool, if you don’t have a wire rack leave them on the baking tray for 10 minutes to cool
  10. To make the icing sugar mix with a little water until you get the consistency you want then spread over each biscuit
  11. Finally use your gold or silver balls to decorate along with your cherries and angelica, then place in the fridge to set.
