Ricotta Ice Cream

Nuts,candied fruits and liqueur are used here to create a special melt-in-the-mouth treat.

Ingredients

  • 1/4 cup pistachios
  • 1/4 cup walnuts or pecans
  • 1/4 cup toasted and chopped hazelnuts
  • grated rind of 1 orange and lemon
  • 2 tbsp preserved ginger
  • 2 tbsp candied cherries
  • 1/4 cup dried apricots
  • 3 tbsp raisins
  • 1 1/2 cups ricotta cheese
  • 2 tbsp amaretto or brandy
  • 1 tsp vanilla extract
  • 4 egg yolks
  • 2/3 cup superfine(caster)sugar

Method

  1. Roughly chop the pistachios and walnuts and mix with toasted hazelnuts,orande and lemon rind in a large bowl.Finely chop the ginger,cherries,apricots and raisins and add to the bowl.
  2. Stir the ricotta evenly through the fruit mixture,then add the liqueur and vanilla essence.
  3. Beat the egg yolks and sugar until very thick and creamy.
  4. Carefully fold the ricotta mixture evenly through the beaten eggs and sugar until smooth.
  5. Line a loaf panwith a double layer of plastic wrap.Pour in the ricotta mixture,level the top,cover with more plastic wrap.Chill in the freezer until firm,preferably overnight.
  6. Serve in slices and decorate with whipped cream and nuts.
