Ricotta Ice Cream

Nuts,candied fruits and liqueur are used here to create a special melt-in-the-mouth treat.

Ingredients
- 1/4 cup pistachios
- 1/4 cup walnuts or pecans
- 1/4 cup toasted and chopped hazelnuts
- grated rind of 1 orange and lemon
- 2 tbsp preserved ginger
- 2 tbsp candied cherries
- 1/4 cup dried apricots
- 3 tbsp raisins
- 1 1/2 cups ricotta cheese
- 2 tbsp amaretto or brandy
- 1 tsp vanilla extract
- 4 egg yolks
- 2/3 cup superfine(caster)sugar
Method
- Roughly chop the pistachios and walnuts and mix with toasted hazelnuts,orande and lemon rind in a large bowl.Finely chop the ginger,cherries,apricots and raisins and add to the bowl.
- Stir the ricotta evenly through the fruit mixture,then add the liqueur and vanilla essence.
- Beat the egg yolks and sugar until very thick and creamy.
- Carefully fold the ricotta mixture evenly through the beaten eggs and sugar until smooth.
- Line a loaf panwith a double layer of plastic wrap.Pour in the ricotta mixture,level the top,cover with more plastic wrap.Chill in the freezer until firm,preferably overnight.
- Serve in slices and decorate with whipped cream and nuts.
