Rosemary Apple Tart

This tart is the perfect way to use fall apples. The Rosemary adds a nice earthy taste.

Ingredients

  • 1/2 cup Rosemary leaves
  • 8 oz Puff Pastry
  • 6 large Apples (Granny Smith is the best choice) sliced
  • 1/4-1/3 cup Cold Butter
  • 1/2 cup Ricotta Cheese
  • 1/3 cup light Brown Sugar

Method

  1. Preheat oven to 350*
  2. In a blender or food processor, chop Rosemary leaves until they are almost a powder.
  3. Roll out Puff Pastry into a 10-12″ square and place on a baking sheet lightly sprayed with non-stick cooking spray.
  4. Spread Ricotta evenly over rolled pastry.
  5. Place apples, overlapping in rows.
  6. Pinch the edges of the pastry to create a raised edge.
  7. Sprinkle Rosemary and Brown Sugar evenly over Apples
  8. Place thin slices of cold butter on top of the sugar mix.
  9. Bake in preheated oven for aprox 30 minutes.
