Southern Food: Classic Peanut Butter Pie

Serve Mom’s Peanut Butter Pie with ice cream, custard sauce , whipped cream or a bit of jam on the side.
Ingredients
- 1 9-inch unbaked pie crust, thoroughly chilled
A common brand of pastry dough - 3 large eggs, beaten
- 1/2 c granulated sugar
- 1 c dark corn syrup or cane syrup
- 1/2 c peanut butter, smooth
- 1 tsp vanilla essence/extract
- 1 c salted peanuts, crushed
Method
- Oven at 400 F/200 C
- Mix the beaten eggs, sugar, syrup, peanut butter and vanilla until smooth. Stir in the crushed peanuts. Pour into the cold pie crust.
- Bake the Peanut Butter Pie for 15 minutes at 400 F, then turn the oven to 350 F and bake for about 30 minutes more. The filling will be dark brown and firm. Cool the Peanut Butter Pie thoroughly before cutting.

Sounds like a delicious recipe…I’m wondering why you used smooth peanut butter and and then added crushed peanuts though, would it not have been easier to just use crunchy peanut butter?

Hello Shari! Thanks for your comment. We tried the recipe both ways, with smooth and crunchy peanut butters. The crushed peanuts are a little coarser than what’s in crunchy peanut butter. Also adding the peanuts separately seems to give a fresher flavour. Try it your way and let us know!
