Strawberry Carnival Pudding

Truly a carnival – strawberry lovers would love it.

Ingredients

  • Strawberry jelly      1 Pkt.
  • Fresh cream    200 grams
  • Sugar powdered      2 Tbsp.
  • Strawberries  ¾ tea cups.
  • Vanilla ice-cream  2 small cups.
  • Sweetened cream and strawberries for decoration.

Method:

  1. Dissolve jelly in 2 cups of boiling water.
  2. Cool a little and pour a small amount into a jelly mould. Put to set in the freezer.
  3. To the remaining jelly, add vanilla ice-cream and beat.
  4. Beat cream with sugar till thick.
  5. Put the vessel containing the remaining jelly with ice-cream in a larger vessel filled with ice cubes and go on stirring all the time.
  6. When the mixture slightly thickens add the beaten cream and sliced strawberries.
  7. Stir for one minute and pour mixture over the set jelly. Put to set in the freezer.
  8. Just before serving, dip in hot water for a few seconds, loosen the sides and UN-mould on a plate. Decorate it with strawberries and fresh cream.
