Strawberry Jam Cookies

Energy-packed strawberry jam cookies are easy to make, take anywhere snacks that are brilliant to accompany you on your travels to help combat road fatigue and the carnage it creates.

Strawberry Jam Cookie Ingredients:
- 2 Cups (300g) of Sifted Plain Flour
- ¾ Cup (185ml) of Canola Oil
- ¾ Cup (170g) of Caster Sugar
- ½ Cup (160g) of Strawberry Jam
- 2 Eggs
- 2 Teaspoons O Baking Powder
- 2 Teaspoons of Vanilla Extract
- 1 Teaspoon Lemon Essence
- 1 Teaspoon of Grated Lemon Zest
- ½ Teaspoon of Freshly Ground Sea Salt
- Additional Sifted Sugar (for coating glass for flattening)
Method:
- In a large mixing bowl beat together the canola oil and the caster sugar until blended
- Now beat in the eggs, the vanilla extract, the lemon essence and the lemon zest
- In another mixing bowl combine the sifted plain flour, the baking powder and the salt
- Gradually add and beat the dry ingredients into the sugar mixture and mix well
- Preheat oven to 2000C
- Drop rounded tablespoons of dough about 5cm (2”) apart onto non-greased baking trays
- Sift some sugar into a small bowl
- Coat the bottom of a glass with non-stick cooking spray
- Dip glass into the sifted sugar
- Use the bottom of the prepared glass to flatten the cookies, redipping in the sugar as required
- Drop ¼ teaspoon of strawberry jam atop the center of each flattened cookie
- Transfer loaded baking trays to preheated oven and bake at 2000C for 8 – 10 minutes or until golden brown
- Once cooked remove the strawberry jam cookies from the oven and allow them to cool on the baking trays for a 1 minute before transferring them to wire racks to cool completely
- When completely cooled transfer the strawberry jam cookies to an airtight container ready for serving
