Sweet Omelets

This is a great way to end your meal.

Ingredients

  • 2 eggs
  • ½ teaspoon salt
  • 1 ½ tablespoons of granulated sugar
  • ½ teaspoons vanilla
  • 1 tablespoons of butter
  • 2 tablespoons of confectioner’s sugar

Method of Preparation

  1. Combine the eggs, salt, granulated sugar, and vanilla and beat only long enough to blend
  2. Put a 7 inch nonstick skillet over the heat. When the pan is hot, add the butter and as soon as it foams, tilt the pan so the butter coats the bottom.
  3. Pour in the eggs
  4. Shake the pan forward and backward, pulling the eggs with a fork and letting the uncooked part run out to the edges, until the whole is creamy
  5. Fold it in half and roll it out onto a warm plate
  6. Sprinkle with confectioner’s sugar (Serves one)
