Sweet Potato Pudding, Jamaican Style
There are sweet potato puddings, and then there are sweet potato puddings, but none can be compared to the traditional Jamaica sweet potato pudding.
Sweet potato is one of Jamaica’s staple foods. It is grown in reasonable quantities in the Caribbean and is sometimes served as accompaniment for Jerk Chicken pork and fish. Many individuals do not like sweet potato boiled in salt and water. Some individuals will eat it roasted or bake and many love to have candid sweet potato with roasted or baked chicken.
Most Jamaicans love to eat sweet potato pudding. One interesting oldwife’s tale about sweet potato that causes many men to shy away from sweet potato is that it will prevent them performing sexually and that is the greatest fear of most men. However they will completely forget the saying when a slice of Jamaican sweet potato pudding is placed before them as this is one of the country’s traditional dishes. Here is a recipe for the Jamaican sweet potato to pudding
Ingredients
- 4 cups sweet potato
- 1 cup wheat flour
- 1 ½ cups brown sugar
- 1 grated coconut
- 3 cups warm water
- 1 tsp mixed spice
- 1 tsp nutmeg
- 3 cups water
- 1 tbsp molasses
- 1/4 cup wine
- 1 tbsp vanilla
- ½ cup raisin
- Salt to taste
- 2 tbsp melted butter
You may use the commercial coconut milk but it will not taste the same.
Method
- Grate sweet potato
- Grate coconut and juice with water leaving a 1/4 un-juiced
- Combine the un-juiced grated coconut with the grated potato
- Add flour, sugar and raisin, mixed spice and nutmeg
- Use a little butter to grease a loaf tin and set a side
- Add the remainder of butter to the liquid.
- Mix all liquids and add salt to taste.
- Combine this with first mixture
- Add melted butter
- Pour in the greased loaf tin
- Bake at 350 F for a hour or until a knife put in comes out clean from the bottom
- Serve with rum sauce made with one cups anchor syrup and 2 tbsp white rum (optional)

I live in Georgia in the U.S. and some of our favorite dishes are sweet potato pie, baked sweet potatoes with butter, sweet potato bread and candied sweet potatoes. I will try your recipe too.
