Here we give the recipe for a delightful desert all the family can enjoy!

Crumbly Baked Peaches and Cheats Pistachio Ice Cream

Here we show the delights of a popular fruit combined with a popular ice cream choice that millions across the world enjoy!

The Pistachio adds colour and that little bit extra flavour to the traditional Vanilla ice cream. It is also a sublime and wonderful combination with the boozy and natural sweet peaches!

This recipe can be ready in 25 minutes plus a short time resting.

36g in fat, 20g saturated fat.

The Recipe

1 litre vanilla ice cream, softened

100g pistachios, roughly ground

15og plain flour

100g butter

50g Demerara sugar

pinch of cinnamon

6 peaches, halved

100ml sweet wine

1. Mix the softened ice cream with the pistachios, then spoon back into the tub and refreeze until needed.

2. Heat the oven to gas mark 6/ 200 degrees cent. Rub the flour and the butter together until they resemble breadcrumbs, then stir in the sugar and the cinnamon. Set aside.

3. Put the peaches in a roasting tin and pour over the sweet wine. Cover with foil and roast for 10 minutes, then remove the foil and top each peach with some of the crumble topping and bake for a further 5-10 minutes until the crumble is golden and the peaches are tender. Serve with the pistachio ice cream.

Chill the remaining sweet wine and serve with this pudding!
