The Best Carrot Cupcake Recipe

This is a very delicious carrot cupcake recipe. I have made this many times. My family loves it. I love making my own cupcakes and muffins because they are much healthier than the store-bought ones. Try this carrot cupcake recipe and you’ll love it.

I always make these as mini-cupcakes for my kids. For regular cupcakes increase the baking time to about 10-15 minutes more.

I bring these to potlucks too. It’s a delicious recipe. Enjoy!

Ingredients

  • 4 eggs
  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • ¾ cup oil
  • 1½ cup sugar
  • 2 tsp vanilla
  • 2 2/3 cups shredded carrots

Method

  1. In a bowl mix the flour, baking powder, and salt. Set aside.
  2. In another bowl, beat the eggs, oil, vanilla and sugar.
  3. Add the flour mixture, carrots and mix together.
  4. Pour into mini muffin pans.
  5. Bake at 350 degrees for about 15 minutes or until tester in the center comes out clean.
  6. Yields about 60 pcs.

Tips:

  • Use a food processor to shred the carrots easily.
  • Use colorful or decorated mini paper cups.
  • Ingredients can be divided into two if you only want to make half a recipe.

    This sounds delicious. I love dessert recipes that include fruits and/or vegetables. Sometimes it’s the only way to get them into picky kids. I’ll have to give your recipe a try.
