The Best Carrot Cupcake Recipe

This is a very delicious carrot cupcake recipe. I have made this many times. My family loves it. I love making my own cupcakes and muffins because they are much healthier than the store-bought ones. Try this carrot cupcake recipe and you’ll love it.
I always make these as mini-cupcakes for my kids. For regular cupcakes increase the baking time to about 10-15 minutes more.
I bring these to potlucks too. It’s a delicious recipe. Enjoy!
Ingredients
- 4 eggs
- 2 cups flour
- 3 tsp baking powder
- 1 tsp salt
- ¾ cup oil
- 1½ cup sugar
- 2 tsp vanilla
- 2 2/3 cups shredded carrots
Method
- In a bowl mix the flour, baking powder, and salt. Set aside.
- In another bowl, beat the eggs, oil, vanilla and sugar.
- Add the flour mixture, carrots and mix together.
- Pour into mini muffin pans.
- Bake at 350 degrees for about 15 minutes or until tester in the center comes out clean.
- Yields about 60 pcs.
Tips:
- Use a food processor to shred the carrots easily.
- Use colorful or decorated mini paper cups.
- Ingredients can be divided into two if you only want to make half a recipe.

This sounds delicious. I love dessert recipes that include fruits and/or vegetables. Sometimes it’s the only way to get them into picky kids. I’ll have to give your recipe a try.
