Almond Milk Smoothies

Everyone enjoys a refreshing smoothie. I think the best part about healthy smoothies is that I can have them frozen. Somehow when a healthy almond milk smoothie is frozen, you forget it is good for you. My 2 favorite smoothies are pineapple-coconut and mango-peach. Each recipe makes about 4 healthy almond milk smoothies. I don’t like to add any sweetener, but if you want, you can add 2 tsp. of honey to each recipe.

Pineapple-Coconut Smoothie

1 cup almond milk

1 cup crushed pineapple

½ cup shredded coconut

1 ½ cup frozen vanilla yogurt or frozen vanilla soy ice cream (or 1 ½ cup ice cubes for less calories)

2 tsp. honey (optional)

Add almond milk, pineapple and yogurt to a blender.(Add honey if desired). Blend until smooth. Stir in coconut and enjoy.

Mango-Peach Smoothie

1 cup almond milk

1 cup diced mango

½-1 cup diced peach

1 ½ cup frozen vanilla yogurt or frozen vanilla soy ice cream (or 1 ½ cup ice cubes for less calories)

2 tsp. honey (optional)

Add almond milk, mango, peach and frozen yogurt to a blender. (Add honey if desired.) Blend until smooth and enjoy.
