Chocolate Truffle Cake
Makes 10 servings. Be prepared for a six hour chill time.
Ingredients:
2 ½ sticks of butter
¾ cup cocoa
1 tbsp of sugar
1 cup of sugar
1 tbsp of all-purpose flour
2 tsp of vanilla extract
4 eggs (separated)
½ pint of cold whipping cream
Chocolate shavings
Method:
1. Heat oven to 425 degrees.
2. Melt butter in saucepan over medium heat.
3. Add cocoa and 1 cup of sugar
4. Stir well and remove from heat.
5. Add egg yolks one at a time, beating well after each addition.
6. Beat egg whites and 1 tbsp of sugar in a large bowl until soft peaks form.
7. Gradually fold into cocoa mixture.
8. Grease bottom of an 8 inch springform pan.
9. Pour mixture into pan and bake 16-18 minutes (edges will be firm, but center will be soft.)
10. Cool on a wire rack until sides of pan can be removed easily…about 1 hour.
11. Refrigerate cake at least 6 hours.
12. Garnish with chocolate shavings just before serving.
To make chocolate shavings, take a chocolate bar or slab and run it down the finest side of a grater or zester.
