Christmas Ponche De Creme (Uncooked Recipe)
Ponche de Creme is an alcoholic beverage similar to eggnog but one hundred times better. Its got alcohol in it. This seasonal drink is a favorite of the people of the Caribbean island of Trinidad and Tobago.
Ingredients
1 dozen eggs
5 tins condensed milk
3 tins evaporated milk
1 bottle rum
1 green lime (optional)
5-6 dashes of Angostura aromatic bitters
nutmeg
Preparation
Beat eggs with peel of lime in a large bowl until very light. If you prefer to use a blender you will have to omit the peel of lime as you don’t want the lime rind in the drink to spoil the taste. Use drops of lime juice instead. Lime rind or juice is useful in cutting the freshness of the eggs.
When finished beating by hand remove lime peel. Add milk stirring constantly. Add rum, then add at least 6 dashes of Angostura aromatic bitters and stir briskly. Sprinkle with fresh grated nutmeg. Store in bottles and refrigerate. Best served cold and without crushed ice.
