FRESH RASPBERRY & LIME SIDECARS.

SERVESS

This is my own version of the classic Sidecar cocktail. There seem to be many “original” versions, usually containing cognac, but the common perception is a cocktail with a nice balance of sweet and sour. Fresh raspberries and fresh lime juice work a treat together. Add some wonderful world-class spirits and watch the fun dial move steadily upwards.

2SOg fresh raspberries (frozen make

a good second choice) 200ml vodka (I use 42 Below) 250ml Chambord (black raspberry

liqueur) 150ml Cointreau 2 tablespoons sugar syrup (made

with half sugar and half water) juice of 4 limes

litre sparkling water (I use

Antipodes)

2  limes for garnish (optional)

Add a couple of ice cubes to each glass, followed by halfadozen raspberries. Top with another couple of ice cubes.

Place more ice in a large jug. Add the vodka, Chambord, Cointreau, syrup, lime juice and sparkling water. Stir then strain and pour into the chilled glasses.

Garnish with a squeezed wedge of fresh lime or a piece of twisted lime zest, if using.
