Dairy Free and Egg Free Chocolate Mousse

Cream, butter and eggs are the usual ingredients for a smooth chocolate mousse. This dairy and egg free alternative is just as silky and frothy. The secret ingredient in this recipe is soft tofu.

Makes 4 servings

You will need:

  • 3 oz. unsweetened extra dark chocolate
  • ½ lb soft tofu
  • 1 teaspoon vanilla extract
  • 3 tablespoon honey
  • Raspberries (topping)
  1. Melt chocolate over a double boiler.
  2. Mix the tofu in a food processor for 2 mins or until creamy.
  3. Add vanilla extract, honey and melted chocolate.
  4. Pulse until chocolate is well incorporated.
  5. Fill 4 serving glasses with chocolate mousse mixture.
  6. Refrigerate until ready to serve.
  7. Top with fresh raspberries just before serving.
