Dairy Free and Egg Free Chocolate Mousse
Cream, butter and eggs are the usual ingredients for a smooth chocolate mousse. This dairy and egg free alternative is just as silky and frothy. The secret ingredient in this recipe is soft tofu.
Makes 4 servings

You will need:
- 3 oz. unsweetened extra dark chocolate
- ½ lb soft tofu
- 1 teaspoon vanilla extract
- 3 tablespoon honey
- Raspberries (topping)
- Melt chocolate over a double boiler.
- Mix the tofu in a food processor for 2 mins or until creamy.
- Add vanilla extract, honey and melted chocolate.
- Pulse until chocolate is well incorporated.
- Fill 4 serving glasses with chocolate mousse mixture.
- Refrigerate until ready to serve.
- Top with fresh raspberries just before serving.
