Fruit Ice

After a meal, sometimes a light dessert is all that is needed. This light and creamy fruit ice is just right.

Fruit Ice Medley

1 can (about 6 ounces) evaporated milk, chilled for at least 3 hours

1/2 cup confections sugar, sifted

2 bananas

juice of 2 lemons

1 can (about 13 ounces) crushed pineapple

1 jar (about 6 ounces) maraschino cherries, drained and halved with 2 tablespoons syrup reserved

Pour the milk into a large bowl and beat until thick and frothy.  Next, beat in the confectioners; sugar.  Peel and mash the bananas with the lemon juice; stir into the milk mixture together with the pineapple and its syrup.  Set aside a few cherries for decoration stir the rest into the fruit and milk mixture together with the reserved syrup.  Pour the mixture in to  a rigid plastic container and freeze uncovered, at the freezers lowest setting, for about 2 hours, until frozen around the edges.  Loosen the frozen mixture with a fork and stir through the whole mixture.  Cover and return to the freezer for 8 hours or overnight. 

When serving, transfer the container to the main part of the refrigerator for 30 minutes until softened..  Scoop into dishes and decorate with remaining cherries.
