How to Make Cordial

This a simple and tasty recipe for the perfect elderflower cordial. Great for summer parties, tried and tested. In this article I will demonstrate with elderflowers.

Elderflower cordial can be used to make refreshing drinks, can be added to jellies, ice creams and cake mixtures.

First lets start by understanding what you will need:

Preparation time: 15 minutes

Time before bottling: 48 hours

Ingredients:

  • 25 heads of elder-flowers
  • 1.5kg of granulated sugar
  • 1.5 litres of water
  • 2 lemons
  • 1 whizzed lemon in food processor
  • 1 teaspoon of citric acid
  • 3 sterilised 75cl bottles, screw bottles
  1. Shake the heads of the elder-flowers to remove bugs and leaves.
  2. Put all of the sugar in 1 large bowl, pour over the boiling water and stir to dissolve.
  3. Slice 1 lemon, add to the bowl.
  4. Squeeze the juice from 1 lemon and add to bowl, and add pureed lemon.
  5. Add the elderflower heads, and press with a wooden spoon.
  6. Add heaped teaspoon of citric acid.
  7. Leave covered with a clean tea towel for 48 hours.
  8. Then strain, bottle and serve.
  9. ENJOY!

Tips:

  • Gather heads away from roadsides.
  • Remove stalks
  • Pick large lush Lorelle’s with a good scent.
  • Citric acid isn’t necessary it is just for storage purposes.
