Italian Dessert Recipe
Chocolate Tartufo Tre Scalini is a luscious Italian dessert to be enjoyed by all! These are really fantastic due to the texture of the crunch coating, creamy inside and whipped cream coating.
CHOCOLATE TARTUFO TRE SCALINI
1 quart milk
6 envelopes no-melt unsweetened chocolate
5 egg yolks
2 cups sugar
30 candied cherries
12 ounces sweet chocolate, finely chopped
Combine milk and chocolate in a saucepan. Cook over low heat, stirring constantly, until chocolate is completely melted. Beat egg yolks until thick and lemon colored; beat in sugar. Beat in hot chocolate mixture a little at a time, beating constantly until well blended. Cook over low heat, stirring constantly, for 2 minutes. Remove from heat and pour into 2-quart bowl. Freeze until mixture is thick enough to handle. Form 30 balls with candies cherries inside, using about 3 tablespoons mixture per ball. Roll in chopped chocolate and place on ungreased metal cookie sheet or pie plates and return to freezer until ready to serve.
Remove from freezer 10 minutes before serving. Serve covered with whipped cream.
HINT: Form 3 or 4 balls at a time, then, return balls and mixture to freezer, wait about 10 minutes, or until mixture again is hard enough to work with.
