Lemon Granita

A refreshing palate cleanser for after dinner.

Ingredients:

1 cup freshly squeezed lemon juice

1 cup of water

¾ cup sugar

Heavy pinch of salt

Process:

1.       Combine water salt and sugar in small sauce pan.

2.       Heat water and dissolve sugar.

3.       Once sugar is fully dissolved add lemon juice.

4.       Place mixture in shallow (not too shallow) baking dish.

5.       Place in freezer for an hour.

6.       Take out of freezer and scrape ice with a fork.

7.       Repeat steps 5 and 6 at least twice more.

8.       When ice is fluffy and soft, serve.

Lemon Granitas will keep for one week in the freezer.
