Try the delicious recipe for Mediterranean Coffee. Also, Spiced Coffee Vienna and Cafe Mexicano are sure to please.

Mediterranean Coffee

2 quarts strong hot coffee

1/4 cup chocolate syrup

1/2 cup sugar

4 cinnamon sticks, each about 3 inches long

1 1/2 teaspoons whole cloves

1/2 teaspoon anise flavoring

Peel of 1 orange, in strips

Peel of 1 lemon, in strips

Whipped cream

Combine coffee, chocolate syrup, sugar, cinnamon, cloves, and anise in a deep chafing dish or large carafe with a flam underneath it.  Steep over very low heat for 15 minutes (do not boil).  (I have  also used a large saucepan instead of a chafing dish or carafe).  Serve in demitasse cups or small mugs with a twist of lemon peel, a twist of orange peel, and a spoonful of whipped cream in each.

Spiced Coffee Vienna

3 cups extra-strong hot coffee

2 cinnamon sticks

4 whole cloves

4 allspice berries

Whipped Cream

Nutmeg

Sugar

Pour coffee into chafing dish with a flame underneath it.  Add cinnamon sticks, cloves, and allspice berries.  Steep over very low heat for 10 to 15 minutes.  Strain.  Pour into wine glasses and top with whipped cream.  Sprinkle with nutmeg and serve with sugar.  (Saucepan over low heat may be used in place of a chafing dish).

Cafe Mexicano

4 teaspoons chocolate syrup

Whipped cream (Cool Whip)

1/4 teaspoon cinnamon (for topping)

1/4 teaspoon nutmeg

1 tablespoon sugar

1/2 teaspoon cinnamon (for coffee)

1 1/2 cups strong hot coffee

Put 1 teaspoon chocolate syrup into each of 4 small cups.  Combine whipped cream with 1/4 teaspoon cinnamon, nutmeg, and sugar.  Stir 1/2 teaspoon cinnamon into coffee.  Pour into cups and stir to blend with syrup.  Top with the spiced whipped cream.
