Mint Punch: A Cool Refreshing Drink

A cool, refreshing drink that’s healthy as well as invigorating for all hours of the day. Hints of cinnamon and Pandan (Pandanus amaryllifolius) add a unique flavor to the mix.

Preparation time is 10 minutes only, and will serve up to 6 people.

Ingredients

  • 300ml water, boiled and cooled 
  • 10sprigs mint leaves, plus extra for garnishing 
  • 3 tbsp honey 
  • ice cube 
  • 200ml ice cream soda
  • 60ml fresh lemon juice

For syrup (boiled and cooled)

Method

Bring all syrup ingredients to the boil. Simmer for 3 minutes. Add chopped mint leaves and steep until cool. Strain into a jug. Add water, honey, ice cream soda abd lemon juice. Serve with ice cubes and garnish with mint leaves.
