Mint Punch: A Cool Refreshing Drink

A cool, refreshing drink that’s healthy as well as invigorating for all hours of the day. Hints of cinnamon and Pandan (Pandanus amaryllifolius) add a unique flavor to the mix.
Preparation time is 10 minutes only, and will serve up to 6 people.
Ingredients
- 300ml water, boiled and cooled
- 10sprigs mint leaves, plus extra for garnishing
- 3 tbsp honey
- ice cube
- 200ml ice cream soda
- 60ml fresh lemon juice
For syrup (boiled and cooled)
- 200ml water
- 150g sugar
- 4cm cinnamon stick
- 4 pieces Pandan (Pandanus amaryllifolius) leaves
Method
Bring all syrup ingredients to the boil. Simmer for 3 minutes. Add chopped mint leaves and steep until cool. Strain into a jug. Add water, honey, ice cream soda abd lemon juice. Serve with ice cubes and garnish with mint leaves.
