Nut and Seed Milks: Almond, Brazil, Hazelnut, and Sunflower

These milks will go bad after about 24 hours although they will last longer if you are making yogurt with them.

Ingredients:

  • Nuts or seeds of choice
  • Pure water
  • Sweetener of your choice, a soft date, raw agave , raw honey, or stevia
  • 1 pinch of unprocessed sea salt

To make:

Place soaked almonds or hazelnuts (soak 12 hrs. and discard soak water) or sunflower seeds or Brazil nuts (soak 3 hrs. and discard soak water) in a blender, so that the nuts are even with the level of the uppermost part of the blades. Add pure water to just cover the nuts and blend until smooth. Add more water until desired consistency is reached.

Sweeten to suite your taste buds with a soft date or two, raw honey or a packet of stevia powder (if you use too much stevia, it will become bitter). Strain with cheesecloth or a nut milk bag. I use a paint strainer bag from the hardware store. Make only what you will use in one day. Refrigerate.
