Orange,lime Marinade for Chicken or Pork
Recipe for orange, lime marinade. It enhances and adds a good citrus flavor to grilled or barbecued chicken or pork.

Marinating meat is a great way to add flavor and to preserve the meat, making it last 2-3 times longer in the refrigerator. It also tenderizes and helps to keep the meat juicy during the cooking process. At a Cuban restaurant I worked at in Miami I used a mojo marinade. A mojo is made with sour orange, garlic, cilantro and salt.
On one perticular occasion I didn’t have bitter orange for my mojo marinade. So I used two parts orange juice to one part lime juice to add tartness. I found the combination to have a better taste.
Also, if your making this marinade outside of Miami, its not easy to find sour orange juice. The paprika adds a nice color to the meat during cooking. I haven’t given the amount of salt, because you really need to taste and add salt as necessary. Keep in mind that as with all marinades, the flavor of the ingredients should be exaggerated in order to give the best possible flavor to the cooked product. In other words if your adding spices, add more than you think necessary.
Method
Add all the ingredients to a food processor and blend. Add salt to taste. Fabricate and remove any unwanted parts from the meat, such as fat or sinew. Place the meat in a dish large enough to hold the meat and marinade. Add the marinade and toss well to combine. Store covered in the refrigerator, on the bottom shelf for at least 12 hours, or up to 36 hours. There is enough marinade here for 6-9 pounds of chicken. Any marinade left over will keep for months in the refrigerator
Ingredients
- 2 cups orange juice
- 1 cup line juice
- 1 bunch cilantro, roughly chopped
- 1 small onion, roughly chopped
- 5-6 cloves garlic, crushed
- salt
- 1 Tbs all purpose seasoning
- 1 Tbs sweet paprika

To Aleah, yes it could be used on fish. Although a citrus marinade would actually cook the fish. In any case this marinade is similar to a ceviche marinade which uses lemon or lime juice to cook the fish. the best way to use citrus with fish is too add it during and after its cooked. that way you get the flavor but with out breaking down the fishes delicate texture.
