Pimm’s with Borage

A slight variation on the classic recipe.

Pimm’s with Borage

Summer may be over but there is still enough sunshine for this Pimm’s recipe. Sit in the garden with your feet up and give it a try. It’s delicious and colourful. Serve over lashings of ice.

Ingredients

bottle Pimm’s No 1

crushed ice

bottle lemonade

an peeled and segmented orange

a cored and sliced apple

a sliced lemon

cucumber

fresh garden mint

strawberrries

sprig of borage

Method

Pour one part Pimm’s to three parts lemonade into a large jug.

Add some pieces of the fruit , some mint leaves and the sprig of borage .Leave for a minute or so to infuse.

Half fill large tumblers with crushed ice and pour on the Pimm’s,

making sure each glass has a good helping of fruit.

Delicious.
