Pumpkin Pie Latte

Warm up your friends and family with this healthy toddy.
Try these healthy hot lower-fat versions of coffee house favorites.

Ingredients:
- 2 cups vanilla soy milk
- 1/3 cup pumpkin puree
- 2/3 cup water
- 4 teaspoons espresso powder
- 3 ½ tablespoons sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
Method:
- In a small pan, whisk together all the above ingredients and simmer over medium heat.
- Stir occasionally for 10 minutes.
- Serve immediately.
