Sambar for Idly
Sambar is side dish used for idly, dosa, and so on in South India.
This dish is made with yellow lentils known as Toor dal here.

Ingredients for sambar powder:
Red chillis – 2 to 4, according to taste
Coriander seeds – 1 table spoon
Cumin seeds – 1 tea spoon
Asafetida – 1/4 tea spoon
Fenugreek – 1/4 tea spoon
Black pepper – 1/4 tea spoon
Mustard seeds – 1/4 tea spoon
Roast all these items in low flame and grind well to make a fine powder. This powder is usally prepared in large quantities and stored in all South Indian houses for ready use.
Ingredients for sambar:
Yellow lentils – 1 cup
onions – medium sized – 2 cups
tomatoes – medium sized – 3
mustard seeds – 1 tea spoon
oil – 1 tea spoon
salt – to taste
coriander leaves – a few

Procedure:
Cook the lentils until they are soft and keep aside.
Heat oil in a pan, and add the mustard seeds to crackle.
Add the chopped onions and fry.
Add the chopped tomatoes and fry.
Add a tea spoon of sambar powder, 1 cup of water, and salt to taste. Leave this mixture to boil for minutes.
Now add the cooked and mashed lentils to this mixture, mix well, and again leave it to boil for 2 minutes.
Add coriander leaves.
Now the sambar is ready to serve with idly.
