Sour Cherry: Spoon’s Candy

A traditional type of candies in Greece is “spoon’s candies”. You can make them with almost any fruit, or even vegetables! Basically it is fruits in dense syrup. More dense than compote, less dense than marmalade, and the fruit remains “unsmashed”.

This is probably the most “cult” (!) of all the “spoon candies”. The one i like and love most of all.

It also brings back sweet memories as it was common in most of the Greek homes when i was a child. Housewives used to offer it to please their guests. Now times changed; lack of time and the new way of life “force” us to forget practices of the past and in the better case someone can buy it from a store even if its not that hard to prepare such a candy.

Its distingtive and smooth taste is a compination of sour and sweet and after you taste it, enjoy a realy frozen glass of water.

Sweet summer memories…

Ingredients

  • 1 kg sour cherries
  • 1 kg of sugar
  • 1 cup of water
  • Juice from half lemon

Method

  1. Wash the fruits and remove the seeds.
  2. Place the seeds into the water as you remove them from the fruits.
  3. Place the sour cheries into a large pot and cover with the drained water from the seeds and the sugar.
  4. Let stand for some hours or during the night.
  5. Boil for 10 min . Be careful about the foam that occurs during the beginning of the cooking and you have to remove it.
  6. Remove the fruits and boil the syrup alone for other 10 min.
  7. Add the fruits in the syrup and continue cooking until the right density.
  8. Add the lemon juice 1-2 minutes before the end of cooking.
  9. Fill clean jars and keep them into the refrigerator for more lasting.

By the same method you can make plain cherries. Just reduce the sugar amount to 750grams per kilo of fruits.

And a tip: To make the fruits more crisp, pour a few lemon juice over the cleaned sour cherries and let them stand for half hour before you add the sugar and the water.
