Sugar Snap Peas W/ Mint & Lemon

"Just a little mint & lemon zest turns already popular sugar snap peas into a very special side dish." Frozen peas w/ the strings removed can now be found in the freezer section of most supermarkets.

1 lb. fresh sugar snap peas, trimmed & strings attached

2 tsp. olive oil

1 garlic clove, minced

1/2 c. loosely packed chopped mint  leaves

2 tsp. grated lemon rind

1/4 tsp. salt

Juice of 1/2 lemon

1.  Fill bowl w/ ice & water.  Bring pot of water to boil over med.-high heat.  Add sugar snap peas; cook til bright green & still a little crispy; 3-4 min.  Remove w/ slotted spoon & submerge immediately in ice water; drain.

2.  Heat oil over med.-high heat.  Add garlic & saute 1 min.  Add peas, mint & lemon rind; cook 2-3 min., til thoroughly heated.  Add salt & lemon juice. 

Serves 4.

Per serving:  90 cal.; 2.5 g. fat; 0 mg. chol.; 4 g. pro.; 14 g. carbs.; 4 g. fiber; 270 mg. sodium.
