The Way to Make an Homemade Espresso Coffee
If you like a strong coffee you might want to try to make an espresso at home.
This is a simple way to cook an espresso coffee using the simplest of the espresso machines ever invented, called ”mocha”. The machine was invented in 1933 and it is nowadays inexpensive. Coffee lovers might enjoy the opportunity to have their own home-made espresso using probably the simplest and the most affordable of the machines available on the market.

The dimension of this small device vary depending on how much coffee you want to make. The mocha is defined by number of ”cups”: 2, 3, 4, 6 or 9.
Ingredients: you will need the correct ground coffee and there are several makes on the market. It normally says ”espresso” on the tin, so you know you are buying the coffee you need.
Preparation:
1. Pour water in the boiler of mocha (the bottom part of the machine). Make sure that the water level does not exceed the beginning of the small valve.
2. Use a teaspoon to put the ground coffee into the filter, located above the boiler with water. Make sure not to press too much the coffee powder in order to avoid too much resistance while the water is passing through the filter. This might compromise the taste of the coffee itself.
3. Screw the bottom with the top of the mocha and put on the stove. You need a low flame so the rising water will slow and flavourings will be the best.
4. Turn off the heat when the coffee is half way (or more) into the upper part of the machine (there will be a clear mumbling sound when that begins). Wait for the coffee to fill in the upper tank of the machine.
5. Stir the coffee while still in the upper tank of the mocha machine. In fact, the beginning and the ending of the coffee have different density. To mix them will help to give the ideal harmony and fullness of the coffee.
6. It is now ready to serve in the traditional ”espresso cup”.
