Things to Do with Milk
When you have extra milk in the refrigerator and don’t know how to make good use of it. Here are some delicious suggestions. Everyone( I think) likes coconut pie and this pie is so easy to make, you might want to make two of them. Also with the Raspberry French Toast. Everyone will want seconds.

Coconut is one of my favorites so lets make coconut pie.
In a large bowl, beat 1/4 soft butter, 3//4 cup sugar, 3 eggs, 1/2 cup milk, 1 cup coconut and 1 tsp. vanilla. Pour mixture in an unbaked pie shell. Bake at 350 degrees for about 40 minutes. Top with whipped cream and coconut,
or make meringue with two egg whites, beat in 1/2 cup of sugar and a sprinkle of salt, beat with hand mixer or fork, until thick enough to stand in peaks. Spread on pie and sprinkle coconut on top. Put pie back in the oven a few minutes to lightly brown meringue.
Peppermint Hot Chocolate
In a large saucepan whisk 1/2 sugar, 1/4 cup unsweetened cocoa powder, and a sprinkle of salt. gradually stir in 1/3 cup hot water. Whisk well. Bring to a simmer over medium heat. Add 4 cups milk and 3 Tbsp. chocolate syrup. Reduce heat and cook over low heat, stirring until very hot. Don’t let mixture boil. Stir in 1/8 tsp peppermint extract. Ladle into mugs. Garnish with marshmallows if you like.
Raspberry French Toast
In the microwave, heat 3/4 cup seedless red raspberry jam with 3 Tbsp. maple syrup or honey for 1 minute or until very hot. In a large bowl, combine 4 beaten eggs, 1 cup milk, 3Tbsp. sugar, a sprinkle of salt, and 1 tsp. vanilla extract. Dip 8 slices bread in mixture. Fry in 3 Tbsp. butter, turning once, for 4 minutes until golden brown. Serve with raspberry jam, maple syrup or honey, and garnish with fresh raspberries.
