Since that time bubble teashops have popped up across the American landscape to the delight of Asian and non-Asian consumers alike.

Ingredients

  • 2 green tea bags
  • 2 cups boiling water
  • 1-cup large black tapioca pearls
  • 8 cups of water
  • Maple syrup
  • 1-cup fresh strawberries or mango
  • ½-cup cold milk, optional
  • Ice cubes

Method

  1. Pour boiling water over tea bags and let sit for 10 minutes. When 10 minutes has passed, remove tea bags and place tea in the refrigerator.
  2. Meanwhile, bring 8 cups water to boiling.
  3. Add black tapioca pearls to the pot and stir for five minutes to prevent the tapioca from sticking together.
  4. Lower heat to medium, cover pot and simmer for 15 minutes.
  5. Uncover the pot and remove form the heat source and let sit for 20 minutes.
  6. Pour tapioca into a mesh strainer and rinse under cold water for a minute or two.
  7. Fill serving glasses with ice.
  8. Add 3 tablespoons of the cooked tapioca pearls, 2 tablespoons maple syrup and ¾-cup of tea to each glass.
  9. Stir well to dissolve the syrup.
  10. Blend fresh fruit in blender.
  11. Divide fresh fruit and milk, if used, between the glasses and stir or shake vigorously.
  12. Makes approximately 4 servings.
