Herbed Squash Casserole

This herbed Squash Casserole is easy to make and is a delicious addition to your meal. We love stuffing at our house and it brings out all the best flavors in the squash. If you like onions, add lots of it.

This is a favorite casserole at our house. I do tweak it a bit because I am on a low salt diet. Instead of the boxed herb stuffing mix, I make mine with my own baked cornbread. I crumble up my cornbread and add black pepper, sage, butter, onion,and enough water or broth to mix, then bake in the oven a half hour more or less according to how much you have. When I make dressing I make enough for several days. If you bake your own stuffing crumble it up to use in this recipe. I use more stuffing than this recipe calls for. You can adjust to your taste.

Ingredients

  • 2 cups herb stuffing mix
  • 2 cups grated zucchini
  • 2 cups yellow squash
  • 1 cup grated carrots
  • 1 onion, large or small, according to your taste. I use lots.
  • Salt and pepper
  • About a can of broth
  • 4 Tlbs. butter

Method

  1. Preheat oven to 350 degrees. Melt butter in casserole dish. Stir in stuffing mix.
  2. Reserve 1/2 cup stuffing mix for topping.
  3. In mixing bowl, combine all the vegetables. And broth to veggies. You won’t need all the can. Just enough to add moisture.
  4. Pour in the baking dish over the stuffing. Sprinkle with the reserved topping.
  5. Bake for about 40 minutes.
  6. This squash casserole goes well with beans of your choice and slaw. A baked apple would be wonderful for dessert.

    Thank you my friends, I appreciate your support. And Clay you can use chicken, beef, veggie broth or even water. It’s your choice. Any broth from cooked veggies or meat if you have it. I am a catch as catch can cook. I use what I have on hand and it turns out fine.
