Asian Foods: Chunky Potatoes with Cilantro Leaves

Rice Noodles with Bean Curd Soup
Ingredients for serving 6-8 (Warning: Contains Pork)
4 Potatoes peeled and cut into large chunks
Vegetables or peanut oil for frying.
3 1/2 oz (100 grams) pork, not too lean, finely chopped or ground.
1 Green Bell pepper, finely chopped
1 tbsp finely chopped scallions, white part only
2 tsp salt
1/2 tsp white pepper
pinch of sugar
2-3 tbsp cooking water from the potatoes
2 tbsp chopped cilantro leaves
Method
1. Boil the potatoes in a large pan of boiling water for 15-25 minutes or until cooked. Drain, reserving some of the water.
2. In a wok or deep pan, heat plenty of the oil and cook the potatoes until golden. Drain and set aside.
3. In a clean preheated wok or pan, heat 1 tablespoon of the oil and stir-fry the pork, bell pepper and scallions for 1 minute. Season with the salt, pepper, and sugar and stir-fry for an additional 1 minute.
4. Stir in the potato chunks and add the water. Cook for 2-3 minutes or until the potatoes are warmed through. Turn off the heat then stir in the cilantro and serve warm.
