Bollywood Meatloaf
Try this recipe for spicy Bollywood Meatloaf as a change from the usual favourite. Perfect for bringing to a buffet or potluck.

Note: Cold Bollywood Meatloaf makes great sandwiches!
Ingredients
*1 lb pork, beef or chicken minced (or mix them as desired)
*2 large onions, sliced
*1/2 inch cube peeled fresh ginger, grated
*2–3 small green chiles according to taste, sliced thin
*pinch of ground nutmeg
*pinch of ground cinnamon
*2 tbs tomato puree or paste
*1 tsp freshly ground black pepper
*1tsp salt
*4 tbs dried breadcrumbs (plus extra for the tin)
*1 egg
*1/4 c grated cheese (cheddar-type, optional)
*mashed potatoes to cover (optional)
Method
Oven at 350 F
Butter a loaf tin and coat with breadcrumbs. Shake out the excess crumbs.
Mix all the ingredients (except the cheese and mashed potatoes) in a large bowl until well combined. Fry a small sample, taste and adjust as necessary. Pack the Meatloaf mix into the greased, crumbed loaf tin and smooth the top.
Bake Meatloaf at 350 F for about 45–50 minutes or until browned and cooked through. Top the Meatloaf with the mashed potatoes and cheese. Brown under the grill/broiler or continue to bake until the cheese is melted.
Meatloaf goes well with Bombay Potatoes, Spinach Stir Fry, Raita, Veggie Drawer Salad or Chapattis.
