Caribbean Corned Beef

The recipe is ideal if you are looking for a quick and inexpensive meal with a bit of zip in it.

I got this recipe from a work colleague who was born in Jamaica and this was his family’s favourite dish. The thing I love about this recipe is that it so quick to make and is very easy on the pocket.

The recipe will provide for 2 people

Ingredients

  • 1 tin of corned beef
  • 1 medium sized onion
  • 1 tin of chopped tomatoes
  • 1 small tin of red kidney beans
  • 4 oz of mushrooms
  • 2 cups of rice
  • 1 oz of butter
  • 1 beef oxo cude
  • Red hot chilli sauce

Method

Slice the onions and mushrooms but not too finely. Heat a large frying pan  add the butter, mushrooms and cook through for 3 minutes. Add the corned beef in slices and ensure it well distributed around the pan and cooks for 3 minutes. Add the tomatoes,oxo cube and beans and simmer for 5  minutes

Meanwhile cook the rices for ten minutes or as the instructions on the package as cooking times do varying according to the type of rice. Drain and rinse the rice in boiling water and serve onto the plates forming a whole in the centre. Serve the corned beef on top of the rice.

Here is the key factor to this dish . Sprinkle 5 or 6 drops of red hot chili sauce on top and mix in with your spoon. This gives the dish some real zip. You can add further drops to suit your taste.

    I will give it a try. Corned Beef is cheap, and its pretty tasty.
