A Man’s Easy Recipe for Bourbon Chicken

Wife at work and gotta cook? Let’s do it man style.

My wife and I have three kids, ages 11, 10, and 3.  She works three evenings a week, and guess what that means?  Daddy’s gotta cook.  We could just order out, but supper has turned into a real tradition for us;  in a world where there never seems to be time for the kids, it’s a chance to spend time together, create something, and eat (reasonably) healthy.  So here, then, is the first in a series of “Dad’s making dinner” meals.

Ingredients

  • 2 pounds of boneless chicken, cut into little pieces.
  • 1 1/2 tablespoons of olive oil
  • 1 clove of garlic, crushed up.
  • 1/4 teaspoon of ginger
  • 1 teaspoon of red pepper flakes
  • 1/3 of a cup of brown sugar
  • 1/4 cup of apple juice
  • 1 tablespoon of cider vinegar
  • 1 tablespoon of Worcester sauce
  • 1/3 cup of soy sauce
  • 1/2 can corn
  • 1/2 can of peas

The kids and I usually take the time to set the ingredients out in their own little containers;  a grown man and three kids tend to be a catastrophe in the kitchen- this keeps the mess and damage to a minimum. (although it does make a few more dishes)

Method

  1. Heat the oil in a big frying pan till it bubbles.
  2. Stir in the chicken.  Cook until they’re brown, but not crispy brown.
  3. Put all of the other stuff in a pot and cook it on medium until it starts to steam.
  4. Put the chicken in and let it simmer until it’s thick like gravy.
  5. Serve it over rice; we use the Uncle Ben’s stuff.

The whole thing takes less than an hour, and actually tastes like it came from a restaurant.  Save a good size plate for the wife, tell her you slaved over it, and call it a night.  Enjoy!
